We all love chicken. One of the reasons it is so good is it can be used in so many different ways.
Here is a recipe that we eat on a regular basis at home, and it is so good!
This is a recipe for 3 pounds of chicken. Adjust as needed. I highly recommend the leg and thigh combos, but it also works very well with chicken breasts.
Mix the following ingredients in some sort of bowl or bag.
1/4 cup of olive oil
2 table spoons of lime juice
1/2 teaspoon each of salt, garlic powder, onion powder, chipotle pepper
1/4 teaspoon black pepper
1/4 cup chopped cilantro
Next, marinate the thawed chicken in this mix for at least one hour and it is ready to cook.
We prefer to grill it, but I am sure you could cook it in the oven if you prefer.
